What concept development covers
Concept development defines what a restaurant serves, to whom, at what price and in what register — and then translates that into a menu a real kitchen can execute every night with the team and equipment it actually has.
The constraint is what makes it useful. A concept that ignores the brigade's size, the kitchen's line or the property's guest mix will read beautifully and fail in service. The work is holding an idea and an operation in view at the same time.
In practice
At St. Regis Punta Mita, Pablo led a culinary relaunch following a major property remodel — redefining restaurant concepts, menus and kitchen operations for an existing operation rather than a blank page, which is the harder version of the problem.
His own cooking is shaped by place and seasonality, developed through Michelin-starred kitchens in Spain and a decade of conceptual plating across fine dining, banquets and resort restaurants.
